Betty's Beef Chili With Beans

- 1 -2 lb ground beef
- 1 onion, chopped
- 2 stalks celery, chopped
- 2 garlic cloves, minced
- 1⁄4 cup red bell pepper, chopped (optional)
- 1 -2 tablespoon chili powder
- 1 teaspoon salt and pepper
- 1 (28 ounce) can diced tomatoes
- 2 (10 3/4 ounce) cans condensed tomato soup (Campbell's)
- 2 (15 1/2 ounce) cans light red kidney beans, drained (Hanover)
- 3 tablespoons masa corn flour or 3 tablespoons cornmeal
- 1⁄2 cup water
directions
- Brown ground beef in an large pan or skillet.
- Add onion, celery, garlic and peppers (optional).
- Saute 5 minutes.
- Drain grease, I pour my into a large colander.
- Add chili powder, start with 1 T, you can always add more later! Sometimes I grate in a zucchini into the chili, too add a veggie!
- Add salt and pepper.
- Pour in all the tomatoes and drained kidney beans.
- Cook 2-3 hours to let the flavor develop.
- Add in more chili powder if you desire.
- Stir in the masa/cornmeal and water together and mix into the chili to thicken.
- Serve with your favorite toppings - ours are Fritos, onions and shredded cheddar!
