  • Preheat oven to 350.
  • Cream butter and sugars until fluffy.
  • Add banana chucks and beat until smooth.
  • Beat in eggs one at a time.
  • Add Vanilla.
  • In a seperate bowl combine flour, baking powder, baking soda, and salt. Sift together.
  • Slowly add dry ingredients to banana mixture. Blend throughly.
  • Fold in nuts.
  • Turn into greased 9x5 loaf pan.
  • Bake 55-60 minutes or until wooden toothpick inserted in center comes out clean.
  • Turn out on rack to cool.
  • Wrap in foil or plastic wrap and let stand overnight before slicing.

  4. Perfect! I was hesitant first to make this. I thought I might end up wasting more ingredients and time just to use overripe bananas, rather I just trash them. The reason behind hesitancy was that I tried few other banana recipes to use ripe bananas in past but neither turn out worth eating...when I googled banana recipes this time ,this one was rated 5 stars by every baker. So I decided to try.. And here my effort was worth. My hubby said "Yummmm" We are not big fan of banana bread in general but I see this one going faster!
