- 3 cardamom
- 3 cloves
- 2 small cinnamon sticks
- 3 bay leaves
- 1⁄2 star anise
- 1⁄2 teaspoon cumin seed
- 1⁄2 piece ginger
- 1 garlic, piece
- 2 long green chilies
- 1⁄3 teaspoon red chili powder
- 1⁄3 teaspoon garam masala powder
- 1⁄3 teaspoon turmeric
- 2 teaspoons olive oil
- 1⁄2 red onion, sliced length wise
- 2 beetroots, grated
- 1 1⁄2 rice cup basmati rice
- 1⁄2 teaspoon salt
directions
- Soak Basmati rice for 20 minutes.
- Heat oil.
- Add first set of spices(Cardamon, Star anise, cloves, cumin,cinnamon, bay leaves).
- Add onions.
- After frying add ginger garlic and green chilies.
- Add beetroot grated.Fry beetroot.
- Add salt.
- Add soaked rice and 2-3 cups water.
- Add chili powder, Garam masala, turmeric.
- Keep stirring now and then and wait till rice is cooked n fluffy.
- Goes very well with cucumber raita.
