ingredients
- 1 1⁄2 lbs swiss chard or 1 1/2 lbs beet leaves
- 6 cups chicken broth
- 1 garlic clove, crushed
- 1 cup cooked white beans
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon white pepper
- grated parmesan cheese (to garnish)
- red pepper flakes (to garnish)
directions
- Add greens to pot of boiling water and cook 7 minutes. Drain and squeeze well. Bring broth to simmer, add garlic, and greens. Rinse beans and add. Simmer partially covered 10 minutes.
- Sprinkle with salt and pepper to taste. Garnish as desired.
