ingredients
- 1 (15 ounce) can great northern beans, drained and rinsed
- 2 small fresh tomatoes, diced
- 3 fresh basil leaves, chopped
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- salt and pepper
directions
- Mix all ingredients well.
- Chill.

Quick and easy - and tastes good! I altered slightly by using dark red kidney beans (was using up a half can of them left from another recipe). To contrast the dark beans, I used yellow tomatoes. Cut the garlic to one clove (for a half recipe). After tasting, I added a splash of red wine vinegar. Will definitely keep this in mind for other times I have a partial can of beans to use. Thanks for sharing!

Great basic recipe! DH and I enjoyed it served atop some salad greens. The only reason I didn't give 5 stars is that 1 T. of raw garlic is a lot in a recipe this size. I increase the amount of garlic in almost every recipe, but in this case I used just one clove of minced garlic and it was delicious. Thanks, I'll be making again!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
