Barley-Rice Pilaf

ingredients
- 1⁄3 cup barley
- 1⁄4 cup brown rice
- 1 2⁄3 cups hot water
- 1 cup sliced mushrooms
- 1⁄4 cup cubed carrot
- 2 teaspoons parsley
- 1 clove garlic, minced
- 1 teaspoon lemon juice
- 2 teaspoons thyme
directions
- Combine all ingredients in 2 quart glass casserole.
- Mix.
- Microwave covered 5 minutes Then microwave 35- 45 mins at 50% power til liquid is absorbed and rice is tender.
- Let stand 5 mins.

This recipe was just ... okay. It wasn't HORRIBLE, but I guess it didn't work too well for me. I had to add a lot more water than called for, and the vegetables sort of "wilted" anyway. The flavor was rather flat, too, despite what I thought was quite a large amount of herbs. And it yields more like four small servings; if it's supposed to serve eight, then those are about two-tablespoon servings! It's a nice idea, though. Thanks for posting.
