  • Lightly beat eggs.
  • Mix together all ingredients
  • Feel free to add chopped pecans, walnuts, chocolate chips or raisins!
  • Bake at 325 degrees F (Mini cupcakes: Approximately 12-15 minutes. Cupcakes: 23-26 minutes.).
  • Ice with cream cheese icing.

  4. YummmooooO! You did good with this delicate cupcake. I read the ingredients and thought it would be heavy, but I was wrong these are light very fruity sweet and just yummy good. I did garnish with fresh papaya and dried banana slices. Oh OK I may be a bit prejudice being Sam`s Mom but these are truly Delish. Love you Babe! I hope many more great recipes.
