- 1 cup ripe banana puree (mashed banana)
- 1 (18 ounce) pkge.yellow cake mix (without pudding)
- 1 (3 ounce) pkge. vanilla instant pudding mix
- 1⁄2 cup oil
- 4 eggs
- 1 teaspoon vanilla or 1 teaspoon banana extract
- 1⁄2 cup chopped nuts
- 1⁄2 cup mini chocolate chip
- 1⁄3 cup packed brown sugar
- 1 teaspoon cinnamon
- 1⁄2 teaspoon nutmeg
directions
- Combine bananas, cake mix, pudding mix, oil, eggs and vanilla in large mixing bowl.
- Mix well and beat at medium speed for 8 minutes.
- In a small bowl, combine nuts, chocolate chips, brown sugar, cinnamon and nutmeg.
- Pour one half cake batter into a greased and floured tube or Bundt pan.
- Sprinkle with one half of the sugar mixture.
- Cover with remaining batter. then top with remaining sugar mixture.
- Insert knife in batter and swirl in figure eight patterns through layers. (don't overmix).
- Bake at 325 degrees for 60-65 minutes.
- Cool in pan on wire rack 20 minutes and then invert onto rack to cool completely.
