ingredients
- 16 ounces frozen peas (thawed)
- 1 cup chopped celery
- 1⁄2 cup chopped green onion (green & white parts)
- 1 cup cashew pieces
- 1⁄2 cup balsamic vinaigrette (more to taste)
directions
- Toss together all ingredients.
- Serve chilled or at room temperature.

Who could believe that something so simple and fast could be so good?! It took me all of 4 minutes to make and I loved it. I missed the "vinaigrette" part of the recipe, so like several of the other reviewers, I just used white balsamic vinegar. I made it the night before and the cashews were soft (in a good way). But if you want them crunchy, add them just before serving.

Incredibly easy, I had everything on hand and this took minutes to put together. I used balsamic vinegar because I am not a 'dressing' lover, I added 'to taste', probably a bit less than 1/2 a cup. Fresh and crunchy, bursting with flavour, we enjoyed this with our supper, and I made the full amount so that I'd able to take it to the office for lunch! I have to agree with Syd, it cant get any quicker, easier or tastier than this recipe and a definate keeper here also!. I used balsamic vinegar and it was just fantastic. I loved the added crunch of the celery and cashew nuts in this salad and with summer coming on, I know this recipe will be on our menu all the time. Thanks JanuaryBride for a great recipe!
