- 9 ounces rigatoni pasta
- 28 ounces spaghetti sauce
- 1 cup shredded parmesan cheese
- 2 1⁄2 cups shredded mozzarella cheese

Choose either
- 1 lb soy crumbles
- 1 lb sausage
directions
- Heat oven to 375. Spray 13 x 9 baking dish with cooking spray. Cook rigatoni according to package. If making sausage, cook over med-high heat 5-7 minutes. In baking dish layer half each of pasta, sausage or soy meat, sauce and cheese. Repeat layers. Bake 35-40 minutes or until hot and cheese is golden brown.

This was wonderful, veggie jen. I added the optional sausage topping, and I think it added a really nice flavor to the dish and made it quite filling. I wouldn't hesitate to make this again, and, depending on our mood, I might add a little chopped green pepper, onion, garlic or herbs. But it's wonderful as written. Made for the Spring 2014 Pick-A-Chef event.
