  • Cook rigatoni.
  • Drain.
  • Brown ground beef.
  • Drain grease.
  • Mix ground beef, spaghetti sauce, 1 1/2 cups mozzarella.
  • cheese and ricotta cheese together with rigatoni noodles.
  • Pat mixture in a 13" x 9" pan.
  • Sprinkle with remaining 1/2 cup of mozzarella cheese.
  • Sprinkle some grated parmesan cheese on top.
  • Cover with foil.
  • Bake at 375 degrees for 30 minutes.

    No mini rigatoni at my grocery so I used mini penne. This was an easy, delicious pasta casserole. Very cheesy.

    This was a good basic dish that was really easy to make. The ricotta in particularly was a nice touch. But the overall flavor was pretty mild, and we thought it would benefit from some seasoning, maybe a bit of fresh basil, oregano or parsley maybe. Otherwise, this is a great dish. Thank you for sharing your recipe, Jimijoe43. Made for Spring 2011 Pick-A-Chef cooking event.
