Baked Potatoes, Leeks and Carrots

- 400 g potatoes, peeled and thinly sliced
- 300 g leeks or 300 g onions, thinly sliced
- 200 g carrots, peeled and thinly sliced
- 6 fresh basil leaves, torn or 6 fresh parsley, chopped
- salt and pepper, to taste
- 50 g emmenthaler cheese or 50 g cheddar cheese, grated
- olive oil, for brushing and drizzling
directions
- Heat the oven to 180 C or 350°F.
- Brush a dish with oil (earthenware is recommended) and mix the potatoes, carrots and leeks in the dish along with the parsley or basil, salt and pepper.
- Spread evenly in the dish, cover with foil and bake for 60 minutes or until vegetables are tender.
- Remove the foil, sprinkle with cheese and return to the oven until the cheese melts.
- Serve hot straight from the dish.

The adults in my family loved this! (The kids are funny about veggies. Anything other then plain has them a little upset!) I loved how there was so very little fat. I used low fat cheddar (just a sprinkling really) and it was great as a side dish with chicken and apples. Have a great adventure, Sackville!

This is a picture of me and my husband in Portugal, climbing up above the clouds with our bikes.
Right now we are travelling around the world on our bicycles, so I only pop onto Zaar occasionally, when internet connections and time allow me to. Good food is really important to me -- I am happy to pay extra for food that I feel is produced in a sustainable and ethical way and always try to eat using seasonal produce.
When we were in the UK we rarely shopped at supermarkets, trying instead to favour small producers, although we were very lucky in that we lived in London and there was lots of choice.
We also were fortunate enough to have a weekly organic veg box delivered to our door, filled with so many lovely vegetables for very little money. It really opened my horizons in terms of the variety of vegetables I eat. If you're in the UK, check out Riverford for a box supplier as they're amazing!
When I'm not eating I love to take pictures and travel with my husband.
