ingredients
- 1 cup chicken broth
- 1 (1 1/4 ounce) package taco seasoning
- 1 (8 1/2 ounce) can whole corn (drained not rinsed)
- 1 (3 1/2 ounce) package sun-dried tomatoes (dried ones, not in oil)
- 1 (20 ounce) Simply Potatoes Diced Potatoes with Onion (4 servings)
- 2 (15 1/4 ounce) cans black beans (drained not rinsed)

- 1⁄4 - 1 red bell pepper (diced, added for color or to taste)
- 1 bunch green onion (sliced for placement upon serving)
- 1 cup cheese
- 1 cup sour cream
directions
- Process into a sauce (mini food processor): chicken broth, taco seasoning, sundried tomatoes.
- Mix all ingredients (except green onions) thoroughly.
- Pour into a greased baking pan or individual serving bake pans.
- Cover with foil.
- Bake at 425 F for 30 minutes, less for individual servings.
- Stir.
- Sprinkle cheese and green onion on top of a dallop of sour cream to serve!
- Makes 4-8 servings, depending on if used as a snack, side or meal.
