  • 3 well beaten eggs
  • 1 - 1 12 cup milk
  • 1 tablespoon sugar
  • 2 -3 cups corn (fresh or frozen)
  • salt and pepper

directions

  • Mix all ingredients.
  • Pour into a buttered baking dish.
  • Bake at 350°F for about 45-55 minutes.

  1. I served this for Thanksgiving and my guest loved it. I used can milk and garnished the top [after baking] with slices of tomatoes. A very simple recipe with great results.
     
  2. My husband and I liked this, but it did turn out differently than I expected, perhaps because I used the lesser amounts of both milk and corn. It was a little too eggy, which I'm sure would be corrected if you used the 3 cups of corn instead of 2. Nice taste; made the frozen corn taste very fresh.

  4. This was a pretty good side dish. I will definitely add more corn (I only used 2 cups), salt, and pepper if I make it again, though!

Tweaks

  1. I made this in a water bath and sprinkled a little sugar on top at the end of baking; broiled briefly for a brulee topping.
