ingredients
- 1 3⁄4 lbs chicken breasts (about 6 small or medium, skinless or boneless)
- 1 teaspoon italian seasoning
- 2 tablespoons olive oil
- 2 medium eggs
- 2 tablespoons milk
- 1 cup panko breadcrumbs
- 1⁄2 cup grated parmesan cheese
- 1 1⁄2 teaspoons garlic powder
- 1 1⁄2 teaspoons smoked paprika
- 1 pinch sea salt
- 1 teaspoon black pepper
- 1 spritz cooking spray (avocado or olive)
- 1 tablespoon chopped fresh parsley
directions
- Trim each chicken breast and pound down to even 1/4 inch thickness.
- Rub the chicken breast with italian seasoning, salt, pepper and olive oil. Marinate for at least 1 hour to overnight in refrigerator.
- Preheat oven to 400 degrees.
- Place grate/rack in rimmed baking sheet (as pictured).
- In large bowl, whisk together egg, milk, salt and pepper.
- In shallow bowl/dish, combine the garlic powder, panko, parmesan and smoked paprika.
- Dip the chicken cutlets into the egg mixture, then dredge it into the panko mixture, lightly pressing down to coat.
- Place the chicken onto the prepared grate/rack and spray with cooking oil.
- Bake in preheated oven for 15 minutes, then flip the chicken cutlets and bake for 5-10 minutes more, or until golden brown and juices run clear.
- Sprinkle with fresh parsley and serve immediately.
