Bacon and Potato Soup

"Comfort Food from January 08' Bunco! I had to triple the recipe in order to feed our group of eight. Serve the soup in a sour dough bread bowl from Panera Bread for something different. Top with shredded mild cheddar cheese and bacon bits. Awesome!"

  • In bacon fat, saute onions 2 to 3 minutes. Drain. In a pot with sauteed onions, add potatoes and water; bring to a boil. Cover and simmer for about 15 minutes, or until potatoes are tender. Stir in soup, sour cream and crumbled bacon. Add milk, salt, pepper and parsley. Heat to serving temperature. Do no boil.

  1. Simple and delicious, very comforting! We like a less-chunky soup so blended after the potato-simmering step, then put the purée back in the pot for adding soup, sour cream etc. Thanks for a lovely easy winter warmer! (Or autumn warmer, more accurately!)

  4. A 5 + star recipe!! So easy to make and the outcome is too yummy!! It has a creamy broth with a smoky flavor.I decided to add 1/4 C. of grated carrots in with the potatoes ( left the skin on) . I also topped this with a sprinkle of cheddar cheese. This is a great recipe, I will be making this again VERY soon and will double the recipe. Bunco Babes, Thanks for this one!
     
  5. Very good and easy to make! It is deliciously creamy and rich, but I think the onions sauted in bacon grease are the key to making this a 5 star recipe. DH topped his with cheese and thought it was comparable to O'Charley's loaded baked potato soup (one of his favorites!) Certainly not the healthiest soup, but a nice treat. I served this on a cold, rainy day with a side of broccoli, but it would pair well with salad as well. This was a PAC 2008 selection.
