  • Whisk together 6 tablespoons olive oil with sugar, vinegar, and soy sauce. Set this sauce aside.
  • Heat remaining 2 tablespoons olive oil over medium heat.
  • Stir in noodles, almonds, and sesame seeds. Cook until golden brown. Let cool.
  • Toss spinach and chopped onions in a large bowl. Add sauce and noodle mixture.
  • Serve immediately.
