Salad Ingredients
- 1 (142 g) package washed Baby Spinach
- 2 cups cooked white rice
- 3 stalks celery, diced
- 1⁄2 cup currants (or golden raisins)
- 1 cup fresh mushrooms, sliced
- 1 bell pepper, diced
- 1 cup fresh bean sprout
- 1 cup unsalted cashews
- 1⁄2 cup green onion, finely chopped

Dressing
- 1⁄4 cup low sodium soy sauce
- 1⁄2 cup olive oil
- 1 garlic clove, minced
directions
- Toss salad ingredients together in large bowl. Emulsify dressing ingredients by shaking vigorously in a lidded jar. Toss with dressing just prior to serving.

I am the proud mom of three great kids aged 9, 6 & 20 months. I previously worked as a counsellor but decided to stay at home after my second child was born. We live in Southern Ontario but have been crisscrossing North America as my husband gets transferred every couple of years.
I love to cook and gradually have been refining my cooking skills over the past few years. I am a recovering vegetarian and I cannot imagine a diet without chicken, beef & fish.
