Asian Peanuts and Rice

"This recipe is something I made up when I accidentally purchased raw peanuts. It's quite healthy, and can be vegetarian/vegan if you skip the oyster sauce. You can change the vegetables if you like, or use any type of rice or even grain like quinoa. I prefer short grain brown rice for this dish. If you want to increase protein, add some firm tofu, or maybe even lentils."

  • Add 1 cup uncooked brown rice and 3/4 cup raw peanuts to 2 cups cold water on stovetop or rice cooker/steamer.
  • Cook until rice according to package directions, about 45 minutes.
  • When cooked thoroughly, toss in vegetables. If they are frozen, the hot water will warm them up and they will have a nice texture. If you want your vegetables a little softer, warm/steam them in advance.
  • Add 1 tsp oyster sauce, 1 tsp sesame oil, 2 tsp soy sauce.
  • Add salt and cayenne to taste.
  • Stir together ingredients and enjoy! Keeps and reheats very well.
