Artichokes With Vinaigrette

"I have not made this recipe yet. I am just posting for others who enjoy artichokes. Serve with vinaigrette for dipping. Pol Martin Cookbook."

directions

  • cut off artichokes stems and snap off leaves near bottom end. cover base with lemon slice and secure with kitchen string.
  • place aritchokes in large pot containing at least 8 cups salted boiling water. partly cover and cook 40 to 50 minutes over med heat, depending on size.
  • when cooked (center leaves should pull free easily) drain well and squeeze out excess water. seperate leaves on platter and remove and discard fuzzy choke. place artichoke bottoms with leaves.
  • Serve with vinaigrette.
