Apple Pie Breakfast Quinoa

ingredients
- 1 cup uncooked quinoa
- 2 cups almond milk
- 2 apples, cored and diced
- 1 tablespoon coconut sugar
- 1 teaspoon cinnamon
- 1⁄4 teaspoon allspice
- 1⁄4 teaspoon clove
- 1⁄8 teaspoon nutmeg
- 1⁄2 teaspoon vanilla extract
- 1⁄8 teaspoon salt
- pecans, for topping to taste
- maple syrup, for topping to taste
directions
- Add everything except for pecans and maple syrup to a saucepan. Bring to a boil, cover and reduce to simmer for 20-25 minutes.
- When the apples are soft, and quinoa has absorbed the water, fluff the quinoa with a fork.
- Pour into bowls and top with maple syrup and pecans.
