Apple Cream Cheese Stuffed Acorn Squash (Microwave)

"A slight twist on a classic favorite, invented when I realized I had no butter. this is a wonderful breakfast or dessert, or just something to warm you up on a cozy fall day. It's one of my ultimate comfort foods. p.s.I usually just eyeball the ingredients. There really is no right or wrong amount of each, nor is there a limit on what kinds of extras you can add. You can also substitute pumpkin pie spice instead of cinnamon."

  • Cut acorn squash in half lengthwise and spoon out the seeds.
  • Place halves, cut side down, in a microwave-safe dish with a couple tablespoons of water.
  • Cook (covered) in microwave on high for 5 minutes or until just tender.
  • Meanwhile, slice up your apples and mix with the sugar, cinnamon, cream cheese, and the optional raisins/nuts.
  • When squash is done, turn them over and fill the holes with your apple mixture.
  • Put it back in the microwave (covered) for another 5 minutes.
  • Let squash rest for a few minutes to cool off before devouring.

i'm a poor vegetarian college student, finally off of the meal plan, yet still living in the dorms. i have limited cooking equiptment, and most of what i cook requires very little work/ingredients. my lifesavers: George Foreman Grill Coffee Pot Mini Crock Pot Microwave i do have access to an oven but i don't have any pots, pans, or bake ware. i always keep aluminum foil on hand.
