ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1⁄4 teaspoon baking soda
- 1⁄4 teaspoon ground nutmeg
- 1⁄8 teaspoon ground cloves
- 1⁄2 cup butter or 1/2 cup margarine
- 1 cup sugar
- 2 eggs
- 2 large apples, peeled, cored and shredded
- 4 teaspoons sugar
- 1⁄4 teaspoon ground cinnamon
directions
- Lightly grease cookie sheet. Set aside.
- In a mixing bowl, stir together 1st six ingredients. Set aside.
- In large mixing bowl, beat softened butter or margarine on medium speed for 30 seconds.
- Add sugar and beat until fluffy.
- Add eggs and beat well.
- Stir in shredded apples.
- Gradually add flour mixture, beating until combined.
- Drop by rounded teaspoons on cooking sheet 2 inches apart.
- Stir together the 4 tsps. sugar and the 1/4 teaspoons cinnamon.
- Sprinkle cinnamon-sugar mixture over tops of cookie dough.
- Bake in 375 degree oven for 8-10 minutes or till bottoms are lightly browned.
- Cool on cookie sheet for 1 minute.
- Remove and cool completely on wire racks, if you can wait that long.
- Makes about 40 cookies.

My toddler son and I really love these cookies. They are a great way to "sneak" some extra fruit in his diet. The taste is great, especially if you use a tart apple...Braeburn, Granny Smith. The texture is very good, but be aware that they turn out more like little cakes rather than cookies. No complaints on that here though! There is no way the recipe makes 40 cookies if you are using a tablespoon to measure the scoops...24 tops.
