Apple Cider Beef Stew

- 1 1⁄2 lbs lean stewing beef
- 8 medium carrots, sliced thin
- 6 medium potatoes, sliced thin
- 2 apples, chopped
- 2 teaspoons salt
- 1⁄2 teaspoon dried thyme
- 1⁄2 cup onion, chopped
- 2 cups apple cider (use actual cider, not unfiltered apple juice, or the stew will be too sweet)
directions
- Place carrots, potatoes, and apples in crock pot.
- Add meat & sprinkle with salt, thyme, and chopped onion.
- Pour the cider over the meat.
- Cover & cook over LOW heat 8-10 hours.
- Thicken juices with flour/cold water mixture ( l-l/2 to 2 tbs flour & 2 tbs water), cooking on HIGH in slow cooker until thickened.

I only came to cooking in my 50s, when we moved home to a tiny town with only a few restaurants. I'm always on the hunt for easy, flavorful recipes (often ethnic cuisines), and I'm always ready to try something new and different! In cold weather I gravitate to stews, soups, and casseroles of the not-too-heavy kind; in hot weather I love a salad or cold soup. Partly because of my husband's diabetes (I'm borderline) and partly out of indolence, baking is not my thing.
