ingredients
- 1 1⁄8 cups cake flour
- 1 1⁄2 tablespoons cake flour
- 1⁄4 teaspoon baking soda
- 1 whole egg white
- 1⁄2 cup skim milk
- 1⁄2 tablespoon vinegar
- 3⁄4 cup brown sugar
- 3⁄4 cup apple, shredded
- 1⁄4 cup carrot, shredded
- 1⁄4 cup unsweetened applesauce
- 1⁄2 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 dash ginger
- 1 dash clove
- 1 dash nutmeg
directions
- Mix wet ingredients, and add dry.
- Stir until everything is moistened (these make a very wet batter).
- Spray a muffin pan with pam, and fill the muffin cs.
- 3/4 full.
- Bake at 400 for 15 to 17 minutes, until a toothpick comes out dry.
