Apple, Bacon and Cheddar Pancakes

  • In a large bowl, mix flour, baking powder, and salt.
  • In a small bowl, whisk melted butter, eggs and milk.
  • Whisk milk mixture into flour mix to make a pancake batter.
  • If it appears too thick, thin with a little more milk.
  • Do not overbeat- the mixture should be slightly lumpy.
  • Gently fold in apples, cheese, and bacon into pancake batter.
  • Heat a large nonstick skillet lightly coated with some oil over medium high heat.
  • Using a 1/4 cup measuring cup, pour into skillet.
  • Cook pancake until done (about 3-4 minutes per side).
  • Set aside, keep warm.
  • Repeat with remaining batter.
  • Serve pancakes with maple syrup.

  1. We all really liked these! I used buttermilk, and ended up adding quite a bit more than the 1 cup it calls for. Be prepared to add an extra 1 1/2 cups to the batter to get it to the right consistency. I used 2 1/2 cups total, and that seemed to be just right.
     
  2. This recipe needs some tweaking. The batter comes out thicker than it should, especially with all the apples, bacon and cheddar in it. I had to add about a 1/2 cup of milk. If i were to make them again I'd probably go with a pancake mix to avoid the consistency issues and make the finished product a little lighter. Also Granny Smith's were a little tart for our liking, maybe a Macintosh next time. Overall it's a good idea that just needs some finishing touches.
     
  3. I made these for breakfast this morning - I knew I would enjoy them because I have been on an apple and cheddar kick lately. I think next time I might add a little more cheese. I tried them first with just butter on them (good but not quite sweet enough), with some honey (better) and with maple syrup (best). So I would suggest going with the recipe and serving with the syrup. These were simple to make and a nice treat for breakfast!
     
  4. I was a little unsure about how good this recipe would taste - the combination of bacon and apple seemed a little strange to me. I had agreed that my daughter could pick a recipe to try over the weekend and she chose this one. It was a huge hit with everyone - especially the kids. I served them plain with melted butter as we had no maple syrup, but next time I'll try them with the syrup. Thanks, Evelyn!

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
