Apple and Flax Pancakes

ingredients
- 1 1⁄4 cups all-purpose flour
- 1⁄3 cup coarsely ground flax seed
- 3 tablespoons sugar
- 1 tablespoon baking powder
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon cinnamon
- 1 dash nutmeg
- 2 eggs (separated, with whites beaten stiffly)
- 1 1⁄4 cups 2% low-fat milk
- 3 tablespoons butter, melted
- 1 cup pared & shredded apple (shredded just prior to adding to batter)
directions
- In a large bowl, combine flour, ground flax, sugar, baking powder, salt, cinnamon and nutmeg.
- In a medium bowl, lightly beat together the egg yolks, milk and melted butter.
- Add liquid ingredients to the dry ingredients. Stir until just combined.
- Shred the apple and add to the batter. Stir until just combined.
- Fold in stiffly beaten egg whites.
- Preheat griddle or heavy fry pan to medium heat. Lightly grease pan or spray with nonstick vegetable spray.
- Using a 1/3-cup measure, pour batter onto pan.
- Cook pancakes until bubbles appear on the surface - about 1 minute.
- Turn pancakes over and brown on the other side.

These are really yummy Kittycat. I love the addition of the flax and especially the cinnamon. They smell fabulous. I do have to agree with the previous reviewers in the amount of pancakes this recipe is suppose to make. I halved the recipe and got 5 pancakes using a 1/4 cup measurer. No worries though as they do make a thick and filling panny. Thanks!!! Made for 123Hits~

These are quite tasty! I, too, appreciate a new way to get in flaxseed (not ANOTHER bowl of oatmeal lol) that feels like a real treat. I used 1/2 whole wheat and 1/2 AP flour, Smart Balance, and skim milk as it is what I keep around. The only reason these don't get 5 stars is, like DuChick, I got way fewer pancakes than posted here--14, I think? I used a 1/4 c measuring cup to spoon out the batter. Thanks for posting; I'm sure I'll make these again. Made for 123 Hits.

Perfect pancakes! These were light and fluffy and had a delicate apple flavor. I used a whole Braeburn apple for shredding, skim milk and Smart Balance margaine rather than butter. A bit labor intensive for a busy weekday, but I enjoyed the kitchen time on a lazy Saturday morning. Next time, I'll try subbing 1/2 of the white flour with whole wheat flour. I had 15 large pancakes (enough for freezing!). Thanks kittycatmom! MERP'd for Potluck Tag.
