- 4 lbs boneless skinless chicken breasts
- 20 ounces pineapple chunks
- 11 ounces mandarin oranges, drained
- 1 green bell pepper, chopped
- 1⁄4 cup onion, chopped
- 1 garlic clove, minced
- 1 tablespoon soy sauce
- 1 teaspoon fresh ginger, peeled and grated
directions
- Arrange chicken in slow cooker; set aside.
- Combine remaining ingredients; pour over chicken.
- Cover and cook on low setting for 8 to 10 hours.

I took the reviewer's advice and added the mandarin oranges during the last half-hour. I just don't have any luck with slow-cooker recipes... they always end up tasting like they've had the life cooked out of them. I thought this one would be different because of the fruit and I really wanted to like it. It was slightly more flavorful than others I've tried, but not enough to make me make it again. Sorry.
