Adam's Chicken

"This recipe is actually my son's recipe. His twin brother provided the name during one of my visits. His comment on dinner was "We're having Adam's Chicken"."

  • Pound chicken flat - 1/4 inch or so. Mix the egg and milk together.
  • Coat the chicken in flour, the egg&milk mixture, and the parmesan cheese in that order.
  • Fry the coated chicken over medium heat using just a small amount of oil. The goal is to sear the cheese to the chicken rather than cook the chicken.
  • Place the chicken into a 350 degree pre-heated oven for 15-20 minutes.
  • While that is cooking, mix the cornstarch with enough water to make a thin paste. Heat the evaporated milk, butter, salt&pepper, parmesan cheese, cornstarch paste, and basil together bringing to a boil for one minute. The sauce should be heavy like a very thick gravy.
  • Serve the chicken covered in sauce to taste.
