Absolutely love this recipe! So easy! I add some canned corn and a little extra cheese and then when I roll the enchiladas I heat a can of refried beans and spoon a stripe of beans across the tortilla before I put down the filling and roll them up. Just gives it a nice creamy texture and adds some flavor!

I used Enchilada Sauce # 31811 and since I didn't have cheddar cheese I used mozzarella. I also used Tofu crumbles instead of beef since I keep kosher and we cannot eat cheese with meat. I'm sure it tastes great with the meaty taste, but I've never had an enchilada before and this was FANTASTIC!!! Thank you for the recipe I will be making it again for sure!
