I recently fell in love with Bok Choy & this is one of my favorite recipes. It is an easy, delicious, healthy & colorful side dish that seems to go with any meal.
FYI: The 1TB of olive oil is an approximation, I usually just eyeball it, so you may need more or less.

Directions:

Separate & wash bok choy, trim bottom of stalks & pat dry.

Chop bok choy into desired width, set aside.

In frying pan heat olive oil & minced garlic on medium heat for 4-5 minutes.

Add bok choy, toss to coat & cook approximately 10 minutes, tossing bok choy every minute or so.

This was just okay for me. I used baby bok choy.It was a little bland on its own, however, i had it with Pan Seared Tuna . The two dishes went together very well. I spooned some of the sauce from the tuna on the bok choy and it made it taste much better. The sauce complimented the bok choy. If I make this again, I will put butter and some seasoning on it. Thanks for a good recipe. Made for PAC '07

I love this recipe! It's simple to make yet so healthy. Delicious with salmon sprinkled with lemon-herb seasoning. Thanks for sharing!
