Whole Wheat Waffles With Sauteed Apples and Cranberries

Waffles
- 1 1⁄2 cups all-purpose flour
- 1⁄2 cup whole wheat flour
- 1⁄4 cup brown sugar, packed
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon ground cinnamon
- 1⁄4 teaspoon salt
- 2 eggs
- 2 cups buttermilk
- 1⁄4 cup butter, melted
- 2 tablespoons vegetable oil

Topping
- 1 tablespoon butter
- 2 tablespoons brown sugar, packed
- 4 apples, peeled and sliced
- 1 cup apple juice
- 1⁄2 cup dried cranberries (You may substitute raisins if preferred)
- 1 tablespoon cornstarch
directions
- To make the topping, melt the butter in a skillet over medium heat.
- Stir in the brown sugar.
- Add the apples and cook, stirring, for 10 minutes.
- Add the apple juice and cranberries and bring to a boil.
- Dissolve the corn starch in 1 tablespoons water.
- Add to the pan and cook, stirring, for 1 minute or until thickened.
- Set aside and keep warm.
- To make the waffles, whisk together the two flours, brown sugar, baking powder, baking soda, cinnamon and salt.
- In a separate bowl, whisk together the eggs, buttermilk and butter.
- Pour over the flour mixture and stir just until combined.
- Heat the waffle iron and brush lightly with some of the vegetable oil.
- Pour in 1/2 cup of the batter for each waffle, spreading to the edges.
- Close the lid and cook for 4 to 5 minutes or until the steam stops and the waffle is crisp and golden.
- Serve warm with the topping.
