- 1 (8 ounce) can apricot halves, drained
- 2 tablespoons brown sugar
- 1⁄4 cup cashew halves
- 1 tablespoon soft butter or 1 tablespoon margarine
- vanilla ice cream
- Set oven control at broil and/or 550 degrees. Place apricots in 8-inch ovenproof skillet or shallow baking dish. Sprinkle sugar and cashews on apricots; dot with butter. Broil with tops about 6 inches from heat until sugar and butter are melted and sauce is bubbly, about 2 minutes. Serve immediately on ice cream.
