Vidalia Tomato Pie

- 6 medium tomatoes, peeled, seeded, and chopped
- 1 large vidalia onion, chopped (about 2/3-3/4 cup)
- 6 slices bacon, cooked and crumbled
- 1 teaspoon dried basil
- 1⁄4 teaspoon salt
- 1 unbaked frozen 9-inch deep dish pie crust
- 1 cup shredded mozzarella cheese
- 1 cup mayonnaise
- 1⁄2 teaspoon garlic powder
directions
- Preheat oven to 400°F.
- In a mixing bowl, toss tomatoes, onion, basil, and salt.
- Spoon mixture into crust.
- Sprinkle with crumbled bacon.
- In a small bowl, stir together cheese, mayonnaise, and garlic powder.
- Spread mixture over pie to edges.
- Bake, uncovered, at 400°F for 25-35 minutes or until golden brown.

This was yummy. However, even though I did place the tomatoes in a collander while doing other prep, the pie came out with tons of water/juice in it. When I tried to serve it, it pretty much just fell apart. Everyone liked the flavor, though. At first I thought I'd be disclined to make it again, but hubby says he liked it. So I suppose I need to find a way to make it less watery. Squeeze out the tomatoes? Toss the onions and tomatoes with a tablespoon of flour? Not sure...

I am also a fan of NASCAR. I have only been to 2 tracks, Talladega several times and Dover once, but I hope to visit many more. Pocono is only an hour away, so maybe someday! Atlanta is another real possibility with family close by.
My furbaby Wickett (a pekinese-poodle mix I had for almost 14 years) went to live at the Rainbow Bridge on April 4, 2007. He was literally my first born child! He will always be in my heart. We have a new dog now, Roxie, who is a Shih-tzu. I am an animal lover, and will always have a pet!
