  • 2 (1 ounce) packages Hidden Valley Original Ranch Seasoning Mix
  • 2 cups seasoned bread crumbs (Chipotle )
  • 1 lb chicken breast (sliced)
  • 2 cups egg whites
  • 14 cup parmesan cheese
  • 1 (14 1/2 ounce) bag red potatoes (washed-pre-cut)
  • 12 cup lemon juice
  • 2 teaspoons salt and pepper

  • Pre- heat oven to 375.
  • Spray 2 medium pans with PAM.
  • Season the potatoes with 1 packet Hidden Valley and cheese set to side.
  • eggs whites in one bowl and bread crumbs and hidden valley mix in another.
  • wash chicken and rinse w/ lemon juice. Dip chicken in egg wash then cover with crumbs place on greased pan place in oven for 45 min to an hour add potatoes in at the last 25 minutes cook until done. Crispy crunchy chicken and tender potatoes. Serve with a side of favorite sauce.
