Two Ingredient Zucchini Soup

  • 1 packet chicken noodle soup mix
  • 4 zucchini, chopped

directions

  • Place soup mix, zucchini and one litre of water into a pan.
  • Bring to the boil.
  • Simmer until zucchini are cooked and soft (approx 15minutes).
  • Blitz with a hand blender or food processor.
  • Enjoy.

  1. Easy, lowfat, and tasty! I added 2 large green onions some celery leaves and 1/2 tsp marjoram. The broth was had a nice veggie flavor when done, but I like chicken soup... so I added a boullion cube @ the last minute. I also did not blitz my soup. Thanks a lot for this gem!!!
     
  2. This is a very comforting soup when you don't feel real good. I didn't "blitz" mine because I wanted something to bite into. It's very easy to make. I will be making this again. Thanks for the recipe.

Hi all. Currently live in Adelaide, Australia. Have 2 beautiful teenage daughters who also love cooking and trying new recipes. I absolutely love chilli - even have it on poached eggs for breakfast!! I collect cookbooks - not that I need them now I have found this website!! I do like to sit with a glass of wine and skim through looking at recipes. Ainsley Harriot is a favourite - his spaghetti with red wine bolognaise sauce is heavenly!! I have a collection of recipes dating back to the 1970's (started collecting them when I was 14) - my children keep saying they want it when I die!!(no intention of going anywhere yet!). I am now doing up 2 books for the kids with my best recipes to give them when they leave home to stop any arguments.
