ingredients
- 1 can drained garbanzo beans
- 1 bunch green onion, diced
- 2 stalk celery, chopped
- 14.79 ml sweet pickle relish
- 59.14 ml chopped olive (optional)
- mayonnaise
directions
- Mash garbanzo beans.
- Add all other ingredients.
- Mix well.
- The tastes come best when mashed thoroughly with own hands.
- Else use a masher but do not use a hand blender at all.
- Serve on bread or toast or as a salad.

I don't know when a recipe that is so simple has given me so much pleasure. The flavors are delicious and do, indeed, taste like tuna salad without the fishy smell. I mashed the garbanzo beans and added the green onions, celery seed, a double portion of chopped salad olives, a generous sifting of dried dill weed. I bound the salad together with a full tablespoon of Dukes Sandwich spread which contains chopped pickles, and with enough plain Duke's Mayonnaise to complete the binding process.It was great just after I fixed it, but even greater after sitting in the refrigerator for a couple of hours to allow the flavors to meld. I'm afraid that "Charlie the Tuna" will not be gracing my table again in a salad, but perhaps for a casserole! The salad would be good on pita or a rustic bread.
