- 1 kiwi, peeled and cut up
- 1 mango, peeled and diced
- 1 banana, peeled and sliced
- 1 lime
- 2 1⁄2 cups vanilla flavored coconut milk yogurt
- 1⁄8 teaspoon ground ginger
- 1⁄4 cup unsweetened dried shredded coconut
- 1⁄4 cup chopped macadamia nuts
- In a large bowl, combine fruit. Squeeze lime juice all over and toss to coat.
- In each parfait glass, spoon ¼ of the fruit.
- Top with ½ cup of yogurt and top with 1 tablespoon each of coconut and macadamia nuts. Repeat. Serve immediately.
