This recipe comes from my Aunt Norma. She and my Uncle Dale moved to Colorado Springs a number of years ago and I am so thankful for email as it is how we keep in touch! She got this recipe from "Electric Bread". It is for bread machines. This makes a large loaf. cook time is a guesstimate as bread machines are all different.
- 1 1⁄4 cups water
- 3 cups white bread flour
- 2 tablespoons dry milk
- 1 1⁄2 tablespoons sugar
- 1 1⁄2 teaspoons salt
- 2 tablespoons butter
- 1 cup mixed dried fruit
- 2 teaspoons fast rise yeast (or 3 tsp active dry yeast)
- Place all the ingredients into your bread machine pan in the order suggested by your machines manual. Mine is we first, dry on top.
- Bake as you would a white bread or sweet bread (depending upon what your machine has). Crust setting per your choice.
I recently bought a used copy of this cookbook and was happy to see this recipe posted. I made this on Saturday and was pleased with the flavor. This is not a sweet bread. In fact, my husband and I were only aware of the mild flavor of pineapple and raisins in this bread. I used the 'Tropical Medley' blend of dried fruit that is sold in the stores. Kerena, for me, you posted this recipe at the right time.
