  1. Sprinkle salt over cucumber; toss gently and let stand 30 minutes.
  2. Drain cucumber slices and press dry between paper towels.
  3. Combine cucumber, green pepper, onions& tomatoes.
  4. Combine vinegar and next 6 ingredients in a jar.
  5. Shake vigorously.
  6. Drizzle over vegetables; toss gently.

Nice, fresh, salad. I used apple cider vinegar and used fresh herbs from the garden.

This recipe is so tasty have made it for many potlucks. I belong to a cooking club and I am presenting it along with the recipe at our next function. If you have left overs, just drain the mixture so the veggies stay crisp for the next day.
