An easy spring salad with just five ingredients.

Directions

  1. Snap off the tough ends of the asparagus and remove scales with a vegetable peeler.
  2. Cook asparagus, covered in a small amount of boiling water for 6- 8 minutes or until tender crisp.
  3. Drain, them plunge into ice water to stop the cooking process.
  4. Drain and set aside.
  5. Arrange lettuce leaves on individual plates.
  6. Arrange asparagus spears and tomatoes on top.
  7. Drizzle wth salad dressing and sprinkle with parmesan cheese.
