  • 1 stalk celery, finely chopped
  • 1 scallion, finely chopped (white and light green part) (optional)
  • 4 pita breads, warmed and cut crosswise in half
  • 13 - 12 cup tofu mayonnaise
  • 8 ounces baked marinated tofu

directions

  • In medium bowl, crumble tofu. Add mayonnaise, celery and scallion if using and stir until well combined.
  • Stuff mixture into warmed pita bread halves and serve.

  4. This was really good. I was going to replace the scallion with pickles (that's how I like tuna salad) but then I thought that soy sauce-marinated tofu might not go so well with pickles and decided to obey the recipe. I'm glad I did, it was really good just the way it's written. Reviewed for Pick-A-Chef
