- 1 (8 ounce) package lasagna noodles
- 4 bunches fresh spinach
- 1⁄2 teaspoon salt
- 3 tablespoons olive oil
- 1⁄2 cup green onion, chopped
- 28 ounces tofu, crumbled
- 4 tablespoons parsley, chopped
- 2 teaspoons soy sauce
- 1⁄8 teaspoon nutmeg
- 1⁄8 teaspoon black pepper
- 1⁄2 cup parmesan cheese
- 20 ounces marinara sauce
- 1 teaspoon crushed red pepper flakes
- 1 garlic clove
directions
- Preheat oven to 350 degrees.
- Boil water. Blanch spinach 1 minute Remove and drain.
- Add salt and olive oil to water. Add pasta. When done, lay flat.
- Saute onions and garlic in olive oil for 1 minute.
- Chop spinach and add to onion.
- Mix in rest of ingredients except cheese.
- Lightly oil 9x13 baking dish. Line bottom with layer of pasta. Spread 1/3 sauce and sprinkle cheese. Add another layer of pasta. Spread 1/2 of sauce and sprinkle cheese. Add another layer of pasta. Spread the rest of the sauce. Sprinkle rest of cheese on top.
- Cover with foil, bake 20 minute Remove foil, bake 15 minute.
