- 59.14 ml dark rye flour
- 29.58 ml yellow cornmeal or 29.58 ml polenta
- 14.79 ml gluten, plus
- 4.92 ml gluten
- 4.92 ml salt
- 9.85 ml fast rise yeast (or 2 1/2 t. bread machine yeast)

- 44.37 ml sunflower oil or 44.37 ml light olive oil

- 532.32 ml bread flour
- 295.73 ml whole wheat flour
- 78.78 ml dark rye flour

directions
- Add all ingredients to the pan according to the order in the manufacturer’s directions.
- Set crust on medium and program for the Whole Wheat cycle; press Start.
- When the baking cycle ends, immediately remove the bread from the pan and place on a rack.
- Let cool to room temperature before slicing.

Hey Ratherbe, very good bread. I made a number of changes to let the whole grains hydrate some. I used water and powdered milk and added a tablespoon of water. I mixed the whole grains with the water and half the yeast, mixed it and let it sit for 2 hours before adding the other ingredients. I used the dough setting and baked in the oven.
