I found this on another recipe site. I was amazed at how it really works. The trick is not to mix it up right after you cook the macaroni.
- Cook the macaroni.
- Rinse it until cool.
- Put it in a covered bowl with about 1 cup of water.
- Put it in the fridge for a few hours or until the next day.
- Stir or shake it several time to "unstick" the pieces and coat them with the water.
- When ready to add the other ingredients, drain the liquid and add to the macaroni.
Great tip for any cold pasta-based salad, thanks! I realized last time I made a pasta salad that the dressing soaked right up into the noodles and it tasted too "dry." I was trying to figure out why...This will do the trick, I'm sure! Thanks!
This "trick" definitely works well. I always have to add more mayo before serving macaroni salad since the dressing always soaks in leaving it dry. I was amazed at the difference it made to let the cooked macaroni sit overnight in the fridge with a cup of water. No more dry macaroni salad.. it stayed creamy even the day after serving it. Thanks for sharing ..it's definitely a keeper.
