This snack dish is from Nigella Lawson's book "Forever Summer".
- 4 medium carrots, peeled
- 1⁄3 cup salted peanuts
- 2 tablespoons red wine vinegar
- 2 tablespoons peanut oil
- 3 drops sesame oil
- Grate the carrots very coarsely.
- In a bowl, combine them with the peanuts and then add the remaining ingredients.
Man, this stuff is addictive! Been making this for a few weeks now to take to work. Very quick and convenient. Feels like I can polish off the whole batch myself. Thanks for posting it!
