ingredients
- 118.29 ml honey
- 118.29 ml molasses
- 73.94 ml cooked mashed sweet potato or 73.94 ml winter squash
- 1 egg white
- 118.29 ml nonfat plain yogurt or 118.29 ml nonfat vanilla yogurt
- 236.59 ml whole wheat flour
- 236.59 ml unbleached white flour
- 7.39 ml baking soda
- 1.23 ml salt
- 9.85 ml ginger (more to taste)
- 4.92 ml cinnamon
- 4.92 ml dry mustard
- 2.46 ml allspice
- 1.23 ml nutmeg
directions
- Beat honey and molasses 5 minutes. Add yogurt, egg white and sweet potato and beat until well mixed.
- Combine dry ingredients and mix well.
- Add wet to dry and mix thoroughly but minimally.
- Pour into a square pan or round cake pan sprayed lightly with Pam.
- Bake in a 350 F oven, 30 minutes or until knife/toothpick inserted in center.
- comes out clean. Start watching it early - when it starts to brown it's probably becoming overcooked.
