Sweet Treat Low-Carb Pumpkin Seeds

- 473.18 ml pumpkin seeds
- 22.18 ml butter-flavored cooking spray (I used "I Can't Believe It's Not Butter Spray)
- 14.79-22.18 ml sugar substitute
- 7.39-14.79 ml cinnamon
- 1.23 ml nutmeg (optional)
directions
- Make sure your seeds are rinsed well and dry.
- Pre-Heat Oven to 400 degrees.
- Pour in Spray Butter and Toss seeds to coat evenly.
- While stirring, add sugar substitute, cinnamon and nutmeg to coat evenly.
- Spread seeds on to a baking sheet. (I line mine with Parchment paper to prevent sticking!).
- Bake for 8-10 minutes (or until seeds are brown), stirring 2-3 times within the cooking time.
- Allow to cool before enjoying!

I love to cook...actually bake! I love the looks on peoples faces when they are enjoying a sweet treat! I find receipes I love and change them to meet my idea of healthy! I cook and bake mostly low-carb after losing 95 pounds on the south beach diet! When I tell people that I used to be overweight they can't believe it but I attribute it to counting carbs and calories and implementing exercise after I got to a weight that allowed me to do that. I have two beautiful little girls and an amazing husband. I recently went back to college (after a five year break of getting married and having children) and will graduate in one year with a degree in Sociology and a minor in Psychology!
