(LFRV) This is most excellent.
- 2 ripe mangoes, peeled and chopped
- 1 (10 ounce) container cherry tomatoes
- 1⁄2 cup basil
- 3 zucchini, spiralized
- 1⁄2 red bell pepper, chopped
- Pulse the first three ingredients in a blender a couple of times. Don't blend too much or it will be watery.
- Pour over top of zucchini & top with chopped red bell pepper. Enjoy!
This was really good! I couldn't make spirals out of my zucchini so I just chopped them and added some elbow macaroni. It also made for a nice dip later on in the evening.
