  • Preheat oven to 325°F (165°C).
  • In a large bowl, beat oil and honey together. Add egg substitute and vanilla, and mix well. Stir in flour and salt. Add baking soda to hot water, stir to mix, and then add to batter. Stir in bananas. Blend in chopped nuts. Spread batter into a greased 9x5 inch loaf pan.
  • Bake for 55 to 60 minutes. Cool on wire rack for 1/2 hour before slicing.

I've been married to the greatest man on Earth for just over a year. I love to cook. Its a major stress reliever and great creative outlet. I also love to see the cunning twinkle in my husband's eye while he is cooking. There is something magical about food. I'd say I'm not a great cook, but I think that would be me cutting myself short.
